Build your startup budget

List the truck or trailer, build-out, cooking equipment, point of sale, permits, insurance, initial inventory, branding, and opening marketing. Add a contingency and enough working capital for the early months.

Understand local requirements

Rules vary by location. Check with your local health department and licensing authorities about permits, inspections, commissary kitchen requirements, parking, fire safety, and events before committing to a vehicle.

Model a realistic service day

Estimate average sale, orders per day, and operating days. Then subtract food, labor, fuel, pitch fees, maintenance, insurance, and other operating costs. Test a slower week as well as a busy one.
